She was an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements as well, so one of the best-known and most well-respected African Americans of the early twentieth century was Nannie Helen Burroughs.

(A) She was an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements as well, so one of the best-known and most well-respected
African Americans of the early twentieth century was Nannie Helen Burroughs.
(B) She was an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements, and Nannie Helen Burroughs also was one of the
best-known and well-respected African Americans of the early twentieth century.
(C) As an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements, Nannie Helen Burroughs was one of the best-known and most well-respected African Americans of the early twentieth century.
(D) As an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements, one of the best-known and well-respected African Americans of the early twentieth century was Nannie Helen Burroughs.
(E) Being an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements, one of the best-known and most well-respected African Americans of the early twentieth century was Nannie Helen Burroughs.

Could you explain this one?

and between C and D, if "one of the best-known and well-respected African Americans ... "and "Nannie Helen" is the same thing, why Can't "as an educator..." modify "one of the...."?

It should be c.

If you go through the OG, you will start to recognize that this kind of sentence should be either
Nannie Helen Burroughs was one of the best-known... , modifier.
or
Modifier, Nannie Helen Burroughs was one of the best-known...

a) wordy
b) wordy
c) correct
technically, this choice is not perfect either: in some dictionaries you’ll find that as an educator should be as educator (like as lawyer, as doctor). I don’t agree with this answer-choice completely, but who cares b/c this test has its own rules
d) not one of the two correct forms
e) wordy + being is bad

You asked why can't "as an educator..." modify "one of the....?" I guess the best answer is they said so.

is this problem actually from the GMAT PREP software?

if so, does anyone have proof? (screenshot, etc.)

it isn't in any of my GMAT PREP resources, so i'd like to verify the source before continuing. (in particular, i don't like the way the initial modifier is written; "as" is questionable. it would be better written as an initial appositive, without the "as".)

someone please post a screenshot before we have any further discussion. thanks.
