23yo Hispanic male, looking to apply in 3-4 years after 2 to 3 promotions

Work exp: Financial analyst at Fortune 500 (Life insurance company)

GPA = 3.0 from top 20 school (3.2 last 2 years including 3.5 in final semester)

Alt transcript: Aced Statistics and accounting courses at local college

GMAT = 660, likely retaking as this was below my practice test range

ECs: Play in several sports leagues, volunteer at local soup kitchen, I am a mentor in a program that teaches lower-income workers the professional skills needed to land a white-collar job.
I am looking into perhaps getting involved in recruitment for my Alma mater (eg. representing at a local college fair or interviewing applicants)

I would really like to go to Darden or Stern - what are my odds as they stand right now and how much would they improve if I get my GMAT to 700+ and expand my ECs

To supplement, my GMAT breakdown was 47 / 33/ 6.0

Why MBA? - Haven't fully thought it out since I'm not applying for a few years but my end goal is to land either a job with a management consulting firm or to get an important, influential managerial position with a top company

Assuming:

(1) Your GMAT score is stronger (even if it's 680+, but ideally 700+), and

(2) Your written applications are stellar AND you interview well

You should be competitive for both the schools you mentioned.

Put it this way. If they're resume builders, it doesn't matter whether you get more involved or not because adcoms will more than likely see through it.

They see through it because the folks who get involved in things they truly enjoy outside of work stick out so much more -- the sincerity and belief comes through in their essays and interviews in a way that is hard to fake.

To add: if those extracurriculars are the real deal for you, then whether you do more or not is a decision separate from your b-school applications (since in your essays and interviews it'll more than likely come across as the real deal whether you do more or not).
