Over Selling?

I graduated with a liberal arts major, so I did not take many business courses, however after I graduated I ended up working in finance (came easy to me).
I am applying to business school and looking at my transcripts grades, I took econ (C) & business law (B-). I complete 3 courses online to make up to for this and I recieved (A-Accounting, A-Econ. Stats & B Corp Finance).

How should I present this? Should I retabulate a seperate GPA score and talk about my improvement?

The three extra courses you took shouldn't be included in your GPA calculation. Instead, you should furnish separate transcripts for these courses, and disclose in the optional essay that you took these 3 additional courses to demonstrate your academic preparedness for the quant aspects of b-school. That's it.
