The OA is D, but 'that was' is somewhat wordy. My question is, if there is another choice: Jazz pianist and composer Thelonious Monk
produced a body of work rooted
Would it be a better choice?

I think you can not. As the past participle, rooted indicates that the action of the past participle occurred prior to the action of the main verb , produced.

But that is not the case here.
