Occasion marking or occasion that marked?

Which is correct/better?

Planned an occasion marking..., or
Planned an occasion that marked?

Wrote a poem discussing the birth of Jesus, or
Wrote a poem that discussed the birth of Jesus?

Ate the pie baked by his sister, or
Ate the pie that his sister baked, or
Ate the pie that was baked by his sister?

Is there a general rule for these kind of situations?

I don't believe that there's any empirical basis for choosing one over the other on the GMAT. Can you produce a question which depends on such a choice?
