Thanks for writing in and sharing your details. For starters, no you're not crazy for pursuing an MBA. In fact one could argue that your story is more compelling than your traditional applicant.
Let's assume you get that 720. First you'll want to do your best to crack the 80% mark on Quant score. As you said, your college work is mostly humanities-based, and I do think schools will be open to your profile, but you still need to prove you can handle MBA-level coursework, and breaking the 80% mark in Quant can do that. You may also want to pursue an online or community college course in Finance or Accounting to show that you are serious and begin building those skills.
Schools may only view your work as "fluff" if you don't present it in a compelling fashion. Use your essays to speak to your career growth, leadership opportunities, and goals. If you can present them in a way that flows together logically, then you're on the right track. Also, you have a great answer for "Why MBA?" -- because you crave the substance that other programs tailored to your background just don't offer.
Regarding your work experience, it seems that you'll have three years by the time you enter school, which is slightly below the median at most schools but certainly doable.
As for the schools -- I think Columbia and NYU would be great choices since you can play up the NYC/arts connection, and if you can get that 720 you could be competitive there, although you don't mention your undergraduate academics, which are of course a factor.
