GMAT navigator

How do I set up the GMAT navigator to ask me a particular number of questions of varying difficulty everyday?

That functionality does not exist in Navigator (though we hope to have the ability to do something like this next year).

There are two official products (both of which cost money) that would let you do something like this:
GMATPrep Problem Pack
Official Guide 2015 editions

The first is an add-on to the free GMATPrep software. It contains about 200 quant and 200 verbal questions (and some IR questions).

The second, the latest editions of the Official Guide books, include online access to the same problems in the books.

In both cases, the software includes the ability to set up random sets of questions that the computer will choose from the relevant question pool.

(Note: unless they have fixed the problem, the RC questions come just one at a time for a passage, rather than in sets of 3 or 4 questions for a passage - so RC is still better done out of the book.)
